Amy's Best Corn Chowder


2 Tablespoons olive oil (sometimes I use 1 Tablespoon olive oil and 1 Tablespoon butter)
1 large chopped onion
1 cup sliced celery
5 cups vegetable stock (lately I've been hooked on Seitenbacher's vegetarian broth and seasoning; 1 teaspoon per 1 cup water)
2 cups frozen corn kernels
2 cups cubed potatoes
Sea salt to taste
1 cup heavy cream
3 Tablespoons unbleached flour
Black pepper to taste
Dried dill weed to taste
