Ingredients

Black Pepper and Sour Cream Pastry Dough
* 2 1/4 cups all-purpose flour
* 1 teaspoon salt
* 3/4 teaspoon black pepper
* 3/4 teaspoon sugar
* 11/4 sticks (10 tablespoons) cold unsalted butter, cut into bits
* 1/3 cup cold vegetable shortening
* 3 tablespoons sour cream
* 3 tablespoons ice water


Tart Filling
* 3 pounds thick white or green asparagus, trimmed to 6 inches and peeled
* 1/2 teaspoon kosher salt plus additional for sprinkling
* 1 cup heavy cream
* 2 large eggs
* 1/4 teaspoon freshly grated nutmeg
* 1 cup finely grated Gruyère
