Amazing Chipotle Pork Chili


1 small onion, chopped
4 cloves garlic, minced
1 tablespoon oil
12 oz pork tenderloin, cut into 3/4-inch cubes
2 teaspoons chili powder
2 teaspoons ground cumin
1 yellow or red sweet pepper, cut into 1/2-inch pieces
1 cup beer or beef broth
1/2 cup bottled picante or salsa
1 to 2 tablespoons finely chopped canned chipotle pepper in adobo (freeze the rest!)
1 15-ounce can small red beans or pinto beans, rinsed and drained
1/2 cup sour cream (optional)
Fresh cilantro (optional but highly recommended!)
