Apple Bread Pudding-Diabetic way

Ingredients

1/2 loaf day old wheat french bread, cut into 1/2 inch cubes (may dry cubes in oven on low heat if desired)
2 medium apples, diced (peel or not your choice)
1/4 cup dried cranberries or other dried fruit-optional
1/2 cup fresh or frozen blueberries-optional
1/2 cup chopped nuts-optional
3 eggs, beaten or egg substitute
1 3/4 cup skim milk
1 cup Splenda granular
1/2 cup Splenda brown sugar
2 Tablespoons cinnamon
2 teaspoons vanilla or preferred extract

Topping:
1/4 cup Splenda granular or brown sugar
2 teaspoons cinnamon

Optional for serving:
sugar free caramel topping
whipped cream
ice cream
