One 2-inch (5-cm) cinnamon stick 1 tsp (5 mL) mustard seeds Pinch cumin seeds Pinch fenugreek seeds Pinch hot pepper flakes cup (125 mL) Gewrztraminer, Vidal or other off-dry white wine cup (125 mL) cider vinegar 2 cups (625 mL) sliced peaches (peeled if desired) 2 tsp (10 mL) minced ginger 1/3 cup (75 mL) packed brown sugar tsp (2 mL) kosher or sea salt 1 tbsp (15 mL) chopped coriander (optional)
