1/4 cup egg substitute or 1 large egg white
2 tsp. olive or vegetable oil
1 large onion, coarsely chopped
2 cups peeled, diced eggplant
2 small zucchini or yellow squash, diced
1 red or green bell pepper, diced
3 cloves garlic, minced
1 14 1/2-oz. can crushed or stewed tomatoes
3 tbsp. tomato paste
1/4 tsp. hot red pepper flakes
1/4 cup chopped fresh basil or 1 tsp. dried basil
4 oz. pepperoni slices, cut into quarters
1/4 cup grated Parmesan cheese1/4 cup seasoned Italian bread crumbs
