2 teaspoons lemon zest
Pinch of ground cinnamon
Pinch of ground cloves
Pinch of ground nutmeg
1 whole egg
2 egg yolks
2 tablespoons sugar
Pinch of sea salt

Caramel:
1 cup (7 ounces) granulated sugar
1/4 cup hot water
1/4 teaspoon sea salt
