1/2 cup tomato sauce, homemade or canned
1/2 cup( about 2 ounces) grated Parmesan cheese
1 egg yolk, beaten
Salt and freshly ground pepper, to taste
Filling:
2 ounces smoked ham, cut into 1/4-inch dice
1/3 cup green beans or asparagus, trimmed, cut in 1/4-inch lengths, blanched
4 ounces smoked mozzarella cheese, cut into 1/4-inch dice
Croquettes:
Corn oil for deep frying
3 eggs, beaten
2 cups fine dry breadcrumbs
