Ingredients

For 6 servings:
1/4 cup butter
1 cup carrots, cut in 1/4 inch slices
1/2 cup celery, cut in 1/4 inch dice
1/3 cup onions, chopped
1/3 cup flour
1 1/2 cups whole milk
1 1/2 cups water
2 teaspoons chicken base
1/4 teaspoon paprika
Dash white pepper
Dash nutmeg
1 1/4 cups (5 ounces) Wisconsin American cheese, shredded
1 tablespoon parsley, chopped

For 48 servings:
1 1/3 cups butter
6 cups carrots, cut in 1/4 inch slices
5 1/2 cups celery, cut in 1/4 inch dice
1 3/4 cups onions, chopped
2 3/4 cups flour
2 1/2 quarts whole milk
2 1/2 quarts water
1/3 cup chicken base
1 tablespoon paprika
2 teaspoons white pepper
1/4 teaspoon nutmeg
2 1/2 quarts (2 1/2 pounds) Wisconsin American cheese, shredded
1 ounce parsley, chopped
