1 cup (4 ounces) shredded Wisconsin
Monterey Jack cheese, divided
3 eggs, slightly beaten
1 1/2 cups half-and-half
1/2 teaspoon salt
1/8 teaspoon pepper
1 small tomato, chopped
1/4 cup pitted ripe olives, thinly sliced
