Ingredients

  • 250.0g pack butter
  • 175g pecan halves
  • 250.0g light muscovado sugar
  • 175.0g dried cranberries
  • 175.0g dried apricots , chopped
  • grated zest and juice 1 large orange
  • 5.0 tbsp brandy
  • 4 eggs
  • 300.0g plain flour
  • 2.0 tsp each baking powder and ground ginger
  • 1.0 tsp ground cinnamon
  • 50.0g crystallised ginger , chopped
  • 3.0 tbsp apricot jam
  • icing sugar , for dusting
  • 250g block marzipan
  • extra pecans , dried apricots, vanilla pod, cinnamon sticks, sliced ginger, glacé cherries and cranberries, to decorate
