  • 1 lb Grnd andouille or possibly other pork sausage
  • 1 c. Finely-minced onions
  • 1/2 c. Finely-minced celery
  • 1/2 c. Seeded, finely-minced green bell peppers
  • 2 tsp Salt
  • 1/4 tsp Cayenne
  • 1 Tbsp. Minced garlic
  • 2 Tbsp. Finely-minced fresh parsley leaves plus
  • 2 tsp Finely-minced fresh parsley leaves
  • 1/4 c. Minced green onions, green parts only
  • 1 tsp Butter
  • 4 lrg Large eggs separated
  • 3 c. Heavy cream
  • 1 1/2 c. Yellow cornmeal
  • 1/2 c. Freshly-grated Parmigiano-Reggiano cheese
