Sherried Chicken Livers Recipe

Ingredients

  • 3 slc Bacon, cut crosswise in 1/2 inch-wide strips
  • 1 lb Chicken livers, cut in halves
  •     Salt & pepper
  • 1 lrg Onion, slivered
  • 1/4 lb Large mushrooms, sliced or possibly quartered
  • 1 lrg Clove garlic, chopped
  • 1/2 tsp Dry basil
  • 1/2 tsp Dry oregano
  • 1/4 tsp Dry savory
  • 1 can (6 ounce) tomato paste
  • 3/4 c. Dry sherry
  • 3/4 c. Chicken stock or possibly broth
  • 1 Tbsp. Butter
  • 1 Tbsp. Extra virgin olive oil
  • 1/4 c. Minced parsley
  •     Grated parmesan cheese, to pass as condiment
