Asparagus Linguine Recipe


  • 1 pkt linguine, (16-oz)
  • 4 med carrots, cut in julienne
  •     strips
  • 1 bn fresh asparagus, carefully washed
  •     (small, tender stalks)
  • 1 Tbsp. margarine or possibly butter
  • 2 Tbsp. light extra virgin olive oil
  •     Juice of 2 lemons
  • 1 x red bell pepper, roasted (see note)
  •     and cut in julienne strips
  • 1 x yellow bell pepper, roasted and cut in
  •     julienne strips
  • 1/8 tsp dry parsley
  • 1/8 tsp dry basil
  • 1/8 tsp dry tarragon
