- 2 Tbsp. Extra virgin olive oil
- 1 sm Potato, cooked and cubed
- 1 tsp Rosemary leaves, fresh and chopped
- Â Â Freshly grnd black pepper to taste
- 3 x Large eggs
- 1/4 tsp Salt
- 2 Tbsp. Mozerella cheese, shredded
- 1 Tbsp. Freshly grated Parmesan
- Â Â Italian parsley, minced
