Artichoke And Potato Frittata Recipe


  • 1/2 c. Artichoke hearts (you must thaw them if they are frzn) 6 to 8 of them
  • 2 Tbsp. Extra virgin olive oil
  • 1 sm Potato, cooked and cubed
  • 1 tsp Rosemary leaves, fresh and chopped
  •     Freshly grnd black pepper to taste
  • 3 x Large eggs
  • 1/4 tsp Salt
  • 2 Tbsp. Mozerella cheese, shredded
  • 1 Tbsp. Freshly grated Parmesan
  •     Italian parsley, minced


1. Bring A Small Saucepan Of Lightly Salted Water To A Boil, And Add In The Artichoke Hearts. Lower The Heat And Simmer For 3 Min; Then Rinse, Drain And Pat Dry. Set Them Aside.…
