Annasi Curry Recipe


  • 1 med Sized ripe pineapple, cleaned, peeled and diced
  •     Oil for cooking
  • 2 x Onions, minced (100 g.)
  • 1 x Stem of lemon grass
  •     A few sprigs of curry leaves
  • 1 1/2 c. Thick coconut lowfat milk, (extracted from 1/2 grated coconut) (360 ml.)
  • 1 tsp Mustard pwdr, (5 g.)
  • 1 tsp Cinnamon pwdr, (5 g.)
  • 6 x Dry red chillies, powdered
  •     A healthy pinch of turmeric pwdr
  •     Salt to taste
  • 1 tsp Fennel seeds, roasted and powdered (5 g.)
