- Â Â Zest of one orange minced coarsely
- 1/4 c. candied ginger minced
- 1 c. gold rum
- 1 c. sugar
- 5 ounce unsalted butter - (1 1/4 sticks)
- 1 c. unfiltered apple juice
- 4 whl cloves grnd
- 6 x allspice berries grnd
- 1 tsp grnd cinnamon
- 1 tsp grnd ginger
- 1Â 3/4 c. all-purpose flour
- 1Â 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp baking pwdr
- 2 x Large eggs
- 1/4 c. toasted pecans - (to 1/2) broken
- Â Â Brandy for basting and/or possibly spritzing
