  • 2 T unsalted butter
  • 2 T all-purpose flour
  • 1/2 teaspoon Dijon mustard
  • Salt
  • Cayenne pepper
  • 3/4 c. lowfat milk, room temperature
  • 2 T whipping cream
  • 1 c. bread crumbs
  • 1/4 c. freshly grated Parmesan cheese
  • 1/4 teaspoon dry mustard
  • 1/2 pound cleaned uncooked crab, shrimp, lobster, scallops or possibly halibut or possibly any combination (bite size pcs)
  • 1/2 pound phyllo pastry sheets
  • 1/2 c. grated Swiss cheese
  • 2 hard boiled large eggs, minced
  • 3/4 c. lowfat sour cream
  • 1/4 c. minced parsley
  • 1/4 c. chopped shallots
  • 2 T minced chives
  • 1 lg. garlic clove, chopped
  • 1/3 c. thinly sliced mushrooms lightly sauteed in butter
  • 3/4 c. unsalted butter
  • 2 T minced parsley
  • 2 T freshly grated Parmesan cheese
  • Chopped parsley
  • Crab or possibly lobster claws (optional garnish)
