Alan's Jerk Marinade Recipe


  • 1 c. Scallions (finely minced)
  • 1/2 lrg White or possibly yellow onion (coarsely minced)
  • 2 Tbsp. Fresh thyme leaves (minced, tough stems removed)
  • 1 x -(up to)
  • 3 x Habanero chiles (to desired heat level) (see note)
  • 2 tsp Jamaican allspice (freshly grnd)
  • 3 Tbsp. Soy sauce (I use tamari)
  • 1 Tbsp. Vinegar (white or possibly cider)
  • 1 Tbsp. Veg. oil
  • 1 tsp Grnd black pepper (and pepper medley)
  • 2 tsp Salt
  • 2 tsp Sugar (I use raw sugar)
  • 1/2 tsp Cinnamon (freshly grnd)
  • 1/2 tsp Nutmeg (freshly grnd)


Put All Ingredients Except The Scallions And Thyme In A Blender (or Possibly Food Processor) And Puree. Then Add In The Remaining Ingredients And Run The Blender Till The…
