Ingredients

  • 20 ounce spaghetti - (1 1/4 lbs)
  •     Freshly-grated Parmesan cheese
  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 3 x garlic cloves minced
  • 1 can crushed tomatoes - (28 ounce)
  • 2 can diced tomatoes in juice - (14 1/2 ounce ea)
  • 1 pch sugar
  • 2/3 c. chicken stock
  •     (or possibly canned low-salt chicken broth)
  • 1/3 c. red wine
  • 1 Tbsp. butter
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 lb lean grnd beef
  • 1/3 c. fresh breadcrumbs made from white bread
  • 1/4 c. diced canned mild green chilies
  • 1/4 c. pine nuts toasted
  • 1/4 c. minced onion
  • 1/4 c. minced green bell pepper
  • 1 lrg egg beaten to blend
  • 1 Tbsp. tomato paste
  • 2 x garlic cloves chopped
  • 1 tsp salt
  • 1 tsp freshly-grnd black pepper
  • 1/2 tsp fennel seeds
  • 1/4 tsp dry thyme
