Granola Stuffed Acorn Squash Recipe

Ingredients

  • 1 c. granola
  • 1/4 tsp grnd ginger - (to 1/2)
  • 1/2 c. apple juice or possibly water
  • 1 x acorn squash - (abt 1 3/4 lbs) well washed,
  •     and halved horizontally
  • 1 Tbsp. honey - (to 2)
  •     Cinnamon to taste
  •     Salt to taste if you like
  • 1 Tbsp. sweet butter cut in two
  • 4 x carrot slices - (to 6)
