Apricot Rum Chiffon Cake Recipe

  • 2 c. sifted flour
  • 1 1/2 c. sugar
  • 3 teaspoon baking pwdr
  • 1 teaspoon salt
  • 1/2 c. salad oil
  • 5 egg yolks
  • 3 T grated orange rind
  • 1 teaspoon vanilla
  • 1 c. egg whites, at room temperature
  • 1/2 teaspoon cream of tartar
  • 1 1/2 c. sugar
  • 1 unpeeled orange, sliced
  • 1/2 unpeeled lemon, sliced
  • 1 c. light or possibly amber rum
  • 1/2 c. apricot preserves
  • 1/2 T lemon or possibly orange juice
  • 1/4 c. minced nuts
  • 1 c. whipped cream
