Antipasto Salad Recipe


  • 1/3 c. Mazola oil
  • 1/4 c. wine vinegar
  • 1 clove garlic, chopped
  • 1 1/2 teaspoon dry basil or possibly 1 T minced fresh basil
  • 1/2 teaspoon salt
  • 1/8 teaspoon crushed dry red pepper
  • 6 ounce Muellers twist trio pasta, cooked & liquid removed
  • 1/4 c. grated Parmesan cheese
  • 2 c. broccoli florets, blanched
  • 10 cherry tomatoes, halved
  • 4 ounce part skim Mozzarella cheese, cubed (about 1 c.)
  • 1 lg. red pepper, cut in julienne strips
