Avery Island Barbecue Sauce Recipe

  • 2 Tbsp. BUTTER Or possibly MARGARINE
  • 1 c. Minced ONION
  • 1/2 c. DICED CELERY WITH LEAVES
  • 1/4 c. DICED GREEN BELL PEPPER
  • 1 Tbsp. Chopped FRESH GARLIC
  • 2 can (14 1/2 Ounce EACH) TOMATOES, UNDRAINED
  • 1 can (6 Ounce) TOMATO PASTE
  • 1/3 c. RED WINE VINEGAR
  • 1 c. PACKED BROWN SUGAR
  • 2 x LEMON SLICES
  • 1 x BAY LEAF
  • 2 Tbsp. CREOLE MUSTARD
  • 2 Tbsp. WORCESTERSHIRE SAUCE
  • 2 Tbsp. TABASCO SAUCE, (up TO 4)
  •     SALT AND PEPPER TO TASTE
