Appalachian Bean Loaf Recipe


  • 2 c. Beans -- mashed
  • 2 c. Soft bread crumbs
  • 2 x Large eggs -- beaten
  • 1 Tbsp. Butter
  •     Or possibly bacon drippings
  • 1/4 tsp Pepper
  •     Lowfat milk
  •     Salt
  • 2 Tbsp. Onion -- minced


Combine All Ingredients Using Sufficient Lowfat Milk To Moisten. Pack Firmly Into Well Buttered Loaf Pan. Bake At 350F For 1 Hour Or Possibly Till Hard. Serve With Tomato Sauce.
