Artichoke Rice Salad Recipe

Ingredients

  • 2 1/2 c. water
  • 1 c. brown rice
  • 1 jar artichoke hearts (6 ounce) marinated
  •     liquid removed and thinly sliced (liquid reserved)
  • 1/3 c. red onion cut vertically into
  •     thin slivers
  • 1 c. minced tomato
  •     One & a half Tablespoons reserved artichoke marinade
  • 1 1/2 Tbsp. red wine vinegar
  • 1 1/2 Tbsp. water
  • 2 x cloves garlic crushed
  • 1 tsp dry parsley
  •     salt and pepper to taste
