Artichoke Frittata Recipe


  • 2 med Onions
  • 1 lb Red potatoes, small
  • 2 Tbsp. Extra virgin olive oil
  • 1 lrg Clove garlic, finely minced
  • 1 tsp Salt, or possibly to taste
  • 1 1/2 c. Artichoke hearts, marinated, well liquid removed
  • 10 x Large eggs
  • 1/4 c. Flat-leaf parsley, minced
  • 1/3 c. Parmesan cheese, grated
  •     Black pepper to taste
