Antipasto Salad Recipe


  • 6 ounce marinated artichoke hearts
  • 2 Tbsp. extra virgin olive oil
  • 1 Tbsp. lemon juice
  • 1/4 tsp lemon peel grated
  • 1 can (10 1/2 ounces) red kidney
  •     beans rinsed/liquid removed
  • 4 ounce hard salami
  • 4 ounce Swiss cheese
  • 1 jar (7 ounces) roasted red
  •     peppers diced
  • 8 ounce mixed salad greens
