Deux Galettes Recipe

Ingredients

  • 1/2 c. lukewarm water 105 to 110F
  • 1 tsp instant yeast
  • 2 tsp sugar
  • 1/2 c. King Arthur Unbleached All-Purpose Flour
  • 1/2 c. King Arthur 100% White Whole Wheat or possibly
  •     Stone Grnd Whole Wheat Flour
  • 1/2 c. semolina
  • 3/4 tsp salt
  • 2 Tbsp. extra virgin olive oil or possibly garlic oil
  • 3 c. sliced mushrooms (1/16 to 1/8-inch thick)
  • 2 med leeks white parts and
  •     tender green parts only, sliced 1/8-inch
  •     thick
  • 4 sm red potatoes skins on, sliced
  • 63/1000 x to 1/8-inch thick
  • 2 Tbsp. extra virgin olive oil or possibly garlic oil (2 to 3)
  • 1 pkt Neufchatel or possibly cream cheese (3 oz) at room
  •     temperature
  •     freshly grnd black pepper to taste
  • 4 x garlic cloves finely chopped
  •     red onion slices for topping
  • 1 Tbsp. fresh chives snipped into
  • 1 piece , for garnish
  • 1 pkt frzn minced spinach (10 oz) thawed
  •     and squeezed dry
  • 1 sm yellow onion diced into 1/4-inch
  • 1 piece and sauteed till softened in 2
  • 1 tsp extra virgin olive oil
  • 2 Tbsp. extra virgin olive oil or possibly garlic oil
  • 1 1/2 c. part-skim ricotta cheese
  • 3/4 c. freshly grated Parmesan cheese divided
  • 1 x plum tomato cut into 1/4-inch
  •     pcs
  • 12 lrg fresh basil leaves snipped into pcs
  • 4 x cloves garlic finely chopped
  •     freshly grnd black pepper to taste
  • 2 ounce feta cheese crumbled
  • 2 x plum tomatoes cut into 1/4-inch
  •     rounds
