- 1/4 c. Parmesan cheese, grated
- 1 c. ricotta cheese
- 2 cloves diced garlic
- 2 T parsley
- 1 T salt
- 1 T pepper
- 1 lg. prepared egg pasta sheet 9", cut in 1/2
- Healthy pinch of saffron
- 3-4 peppercorns
- 1 bay leaf
- 1 shallot, fine dice
- 1/4 c. white wine
- 1/4 c. champagne vinegar
- 1/2 c. heavy cream
- 8 T softened butter
- Juice of 1 lemon
- 1 T salt and pepper
- 1 crisp leaf of radicchio lettuce
