Arroz Con Pollo Recipe


  • 1/4 tsp saffron threads
  • 1/4 c. extra virgin olive oil
  •     a (3 1/2-lb.) chicken, cut into serving pcs
  • 2 x onions minced
  • 2 sm green bell peppers minced
  • 3/4 lb plum tomatoes (about 6), peeled, seeded, and minced
  • 2 x garlic cloves chopped
  • 4 tsp paprika
  • 3 c. Arborio rice (Italian short-grain rice, available at Italian markets and some specialty foods shops)
  • 6 c. chicken broth
  • 1 lrg red bell pepper roasted and cut into strips
  • 1 c. thawed frzn peas
  • 1/4 c. chopped fresh parsley leaves if you like
