Antipasto Rice Recipe

Ingredients

  • 1 3/4 c. Water
  • 1/2 c. Tomato juice
  • 1 c. Lundberg Countrywild rice
  • 1 tsp Dry basil
  • 1 tsp Dry oregano
  • 1/2 tsp Salt
  • 1 can (14 ounce) artichoke hearts, liquid removed & quartered
  • 1 jar (7 ounce) roasted red peppers, liquid removed and minced
  • 1 can (2 1/4 ounce) sliced ripe black olives, liquid removed
  • 2 Tbsp. Parsley, chopped
  • 2 Tbsp. Lemon juice
  • 1/2 tsp Pepper
  • 2 Tbsp. Parmesan cheese, grated

Description

Combine Water, Tomato Juice, Rice Basil, Oregano, And Salt In A 3-qt Saucepan. Bring To A Boil. Stir. Reduce Heat; Cover And Simmer 45 Mins. Or Possibly Till Liquid Is Abosrbed.…
