  • 1 cup shredded Mexican blend cheese (or Colby Jack/Pepperjack)
  • 2 Tbsp canola oil
  • 1 1/2 Tbsp cumin
  • 2 tsp chili powder
  • 1/2 tsp minced garlic
  • Juice of 1 lime
  • 1/3 cup cilantro, chopped (plus more for garnish, if desired)
