- 1/4 lb salt pork or possibly bacon, finely diced
- 1 x white onion, diced
- 4 x cloves garlic, peeled and mashed
- 1 x (15-oz) can red kidney beans with liquid
- 1 x (15-oz) can great northern beans with liquid (or possibly cannellini or possibly navy beans)
- 3 stalk celery, including leaves, sliced
- 1Â 1/2 tsp salt (more to taste)
- 1 x -2 tsp. crushed red pepper (more to taste)
- 1/2 tsp black pepper, freshly grnd
- 1 tsp dry oregano
- 2 Tbsp. minced fresh basil (or possibly about 1 tsp. dry basil)
- 2 x 14 1/(2-oz) cans Italian tomatoes with juice, coarsely minced
- 1 x (15-oz) can tomato sauce
- 1 x (12-oz) can V-8 juice
- 1 x carrot, cut in julienne
- 1/4 c. minced fresh Italian parsley
- 1/2 lb small or possibly large ditalini (tube-shaped pasta)
- 1/4 c. freshly grated Romano, Parmesan or possibly Pecorino cheese
- 1/4 lb grnd beef (preferably sirloin)
- 1 x egg
- 4 Tbsp. seasoned bread crumbs
