Helen's Carrot Cake Recipe

Ingredients

  • 4 x Large eggs, separated
  • 1 1/2 c. Sugar
  • 1 c. Carrots, grated
  • 1 c. Walnuts, finely grated
  • 1 1/2 c. Flour
  • 1 tsp Baking pwdr
  • 1/4 tsp Nutmeg
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla extract
  • 1 pch Salt
  • 1 c. Oil
  • 2 1/2 tsp Water, warm
  • 1/2 tsp Baking soda
  • 8 ounce Cream cheese
  • 1/2 c. Sugar
  • 1/2 c. Jam (strawberry, apricot or possibly raspberry)
  • 1 c. Whipping cream
  • 2 Tbsp. Sugar
