- 4 ounce uncooked regular fettucine
- 2 Tbsp. extra virgin olive oil
- 4 Tbsp. balsamic vinegar
- 8 ounce asparagus, trim & cut in 2" pc
- 1 x sweet onion, very thinly sliced
- 1 med ripe avocado, cut in 1/4" cubes
- 1/2 x red pepper, stemmed and diced
