Ingredients
- You can add any vegetable that has a nice crunch to it
- 1 x 400g package Diamond Brand or Rooster Brand instant noodles, cooked according to package instructions.
- snow peas, julienne
- 1 carrot, julienne
- bok choy, white stalks, julienne. Leaves cut chiffonade
- (stack leaves, roll into a cigar shape, then slice cross-wise very thinly)
- Celery, julienne
- Sweet bell peppers, julienne
- Cabbage, finely shredded
- 1/4 cup cilantro, chopped
- 2 Tbsp. mint, chopped
- Dressing:
- 175 ml neutral oil, like Canola
- 175 ml rice wine vinegar
- 125 ml soy sauce
- 15 ml toasted sesame oil
- 1 clove garlic, minced
- 2 tsp. fresh ginger root, minced
- 1/2 tsp. chili flakes, or to taste
- 1/4 to 1/2 cup sugar (Splenda works well here)
