Asian-style Noodle Salad Recipe


  • You can add any vegetable that has a nice crunch to it
  • 1 x 400g package Diamond Brand or Rooster Brand instant noodles, cooked according to package instructions.
  • snow peas, julienne
  • 1 carrot, julienne
  • bok choy, white stalks, julienne. Leaves cut chiffonade
  • (stack leaves, roll into a cigar shape, then slice cross-wise very thinly)
  • Celery, julienne
  • Sweet bell peppers, julienne
  • Cabbage, finely shredded
  • 1/4 cup cilantro, chopped
  • 2 Tbsp. mint, chopped
  • Dressing:
  • 175 ml neutral oil, like Canola
  • 175 ml rice wine vinegar
  • 125 ml soy sauce
  • 15 ml toasted sesame oil
  • 1 clove garlic, minced
  • 2 tsp. fresh ginger root, minced
  • 1/2 tsp. chili flakes, or to taste
  • 1/4 to 1/2 cup sugar (Splenda works well here)
