- 2 Tbsp. fresh lemon juice
- 1 Tbsp. fresh mint leaves, (2 tsp. dry)
- 1/2 tsp dry oregano, (more to taste)
- 1 x 14 ounce can artichoke hearts, cut into eighths
- 2/3 c. grated feta cheese
- Â Â sliced roasted red peppers
- Â Â chickpeas
- Â Â grated feta cheese
