- 200 ml Vegetable stock
- 2 Tbsp. Extra virgin olive oil
- 1 pch grnd ginger
- 1 pch turmeric
- 1 pch cinnamon
- 1 x Aubergine, cut lengthways into 5mm thick slices

- 1 dsh Tabasco
- 1 x Lime, juice of
- 1 x Tomato, seeded and diced
- 1 Tbsp. Minced, fresh coriander
- 1 Tbsp. Minced, fresh mint
