Meg's Mystic Medley Recipe

Ingredients

  • 115 gm Plain flour, plus extra for dusting
  • 3 1/2 Tbsp. Vegetable oil
  • 1/2 x Lemon, juice of
  • 1/4 tsp Paprika
  • 125 gm Organic tagliatelle
  • 1 x White onion, minced
  • 55 gm Cashew nuts
  • 1 tsp Grated fresh ginger
  • 225 gm Button mushrooms, sliced
  • 125 ml Soya cream
  • 200 ml Vegetable stock
  • 2 Tbsp. Extra virgin olive oil
  • 1 pch grnd ginger
  • 1 pch turmeric
  • 1 pch cinnamon
  • 1 x Aubergine, cut lengthways into 5mm thick slices
  • 1 x Avocado
  • 1 dsh Tabasco
  • 1 x Lime, juice of
  • 1 x Tomato, seeded and diced
  • 1 Tbsp. Minced, fresh coriander
  • 1 Tbsp. Minced, fresh mint
  • 1 Tbsp. Minced, fresh parsley
  •     Salt and pepper
  • 1 sprg fresh dill, to garnish
