Aubergine Acapulco Recipe


  • 1 lrg Aubergine
  • 1/2 c. Bread crumbs
  • 1/2 c. Grated Parmesan cheese
  • 1/4 c. Butter
  •     Salt and pepper to taste
  • 1/2 lb Mushrooms, sliced
  • 2 can (8-ounce) tomato sauce


Peel Aubergine And Cook Till Tender; Cut Into Pcs Or Possibly Mash. Layer Ingredients In 1-1/2 Quart Baking Dish. Bake Uncovered At 350 For 30 Min.
