Artichoke, Sun Dried Tomato And Pancetta Gemelli Recipe

Ingredients

  • 3 x lemons, halved
  • 8 x artichokes (about 5 lb)
  • 1/3 c. extra-virgin extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 c. gemelli pasta (12 ounce)
  • 4 ounce pancetta, minced
  • 1 x onion, minced
  • 2 clv garlic, chopped
  • 1/2 tsp dry marjoram
  • 1/2 c. sliced liquid removed oil-packed sun-dry tomatoes
  • 1 Tbsp. grated lemon rind
  • 3/4 c. grated Parmesan cheese
  • 1/4 c. minced fresh basil or possibly parsley
  • 1/4 c. shaved Parmesan cheese
