Athenian Salad Recipe


  • 1 lrg head romaine (or possibly lettuce of your choice)
  • 1 x English cucumber or possibly 2 small regular ones
  • 3 lrg tomatoes, preferably vine-ripened
  • 3 x green onions, sliced in half lengthwise and minced
  • 8 ounce feta cheese, crumbled (1 c.)
  •     Greek Dressing (see accompanying recipe)
  • 1 c. Kalamata olives
