Aioli (garlic Mayonnaise) Recipe


  • 15 x cloves of garlic pounded or possibly crushed to paste
  • 3 x egg yolks
  •     Salt
  • 1 pt extra virgin olive oil
  • 1 x juice of 1-2 lemons (optional)


Put The Garlic In A Large Bowl. Add In The Yolks And A Little Salt And Beat For A Minute Till The Paste Is Thick And Sticky. Pour In The Oil Drop By Drop, And Whisk Constantly.…
