  • 4 c. Chicken stock
  • 2 Tbsp. Unsalted butter
  • 1 med Leek, white part coarsely minced,
  •     and washed well
  • 1 med Onion finely minced
  • 3 x Celery ribs thinly sliced
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 2 c. Water
  • 3 lrg Large eggs
  •     Juice of 2 lemons
  • 1/4 c. Chopped fresh dill
