- 1 lb Pork shoulder steak, boned and finely minced, not grnd
- 2 Tbsp. Soy sauce, light
- 2 Tbsp. Chinese rice wine or possibly dry sherry
- 1 tsp Ginger, grated
- 6 x Scallions, thinly sliced
- 1 c. Finely minced cabbage or possibly Napa (celery cabbage)
- 1 ounce Chinese dry mushrooms, soaked in water for 2 hrs,
- Â Â Liquid removed and finely minced (reserve the water)
- 4 c. Oil, peanut, for deep frying
- 1 pkt (4 oz) glass noodles (sai fun)
- 2 x Garlic cloves, minced
- 1 Tbsp. Warm bean sauce
- Â Â pn Sugar, granulated
- Â Â Pepper, black, to taste
- 2 Tbsp. Cornstarch dissolved in 2 Tbsp. water
- 1 Tbsp. Oil, sesame, toasted
