  • 1 Tbsp. Extra virgin olive oil
  • 3 Tbsp. Unsalted butter, (1 1/2 oz)
  • 2 x Shallots, chopped
  • 1 tsp Finely chopped garlic
  • 1 c. Chicken stock
  • 1 tsp Minced thyme
  • 1 lb Fresh angel hair pasta
  • 2 c. Trimmed arugula, (about 2 oz)
  • 3 Tbsp. Grated Parmesan cheese plus additional as needed
  •     Salt
  •     Freshly grnd pepper
