Apricot Carrot Muffins Recipe


  • 1 c. All-Purpose Flour
  • 1/2 c. Whole Wheat Flour
  • 1 Tbsp. Baking Pwdr
  • 1/4 tsp Salt
  • 1/2 c. Sugar
  • 2 x Large eggs
  • 3/4 c. Lowfat milk
  • 3 Tbsp. Avocado Oil
  • 1 c. Carrots coarsely grated
  • 3/4 c. Dry Apricots minced or possibly 3/4 c. Whole Raisins
  • 1/2 c. Walnuts coarsely minced


In A Large Bowl Mix Flour Baking Pwdr And Salt. In Another Bowl Whisk Sugar And Large Eggs. Whisk In Lowfat Milk And Oil. Fold In Carrots Apricots And Nuts. Add In To Flour Mix.…
