Anita's Italian Cream Cake Andfrosting Recipe

Ingredients

  • 2 c. plain flour + 1 teaspoon soda
  • 2 c. sugar
  • 1 teaspoon vanilla
  • 5 egg yolks
  • 5 egg whites, stiffly beaten
  • 1 stick butter
  • 1/2 c. Wesson oil
  • 1 c. buttermilk
  • 1 c. coconut
  • 1 c. minced nuts
  • 16 ounce cream cheese
  • 1 stick butter
  • 2 boxes powdered sugar
  • Just sufficient lowfat milk to spread
  • 2 teaspoon vanilla
  • 1 c. minced pecans
  • 1/2 - 3/4 c. coconut (opt.)

Description

Mix All Ingredients, Then Mix In Egg Whites. Blend Well. Bake At 350 Degrees For 25 Min. NOTE: If Using Self Rising Flour, Omit Soda.
