Ingredients

  • 1 c. minced onion
  • 2 x cloves garlic, chopped
  • 2 sm aubergines, (about 1 pound each)
  •     peeled and cut into 3/4-inch cubes, (8 c.)
  • 2 med green bell peppers, diced
  • 2 c. minced ripe tomatoes
  • 1/4 c. minced fresh parsley
  • 1/4 c. pimento-stuffed green olives, sliced
  • 2 Tbsp. liquid removed capers
  • 1/2 tsp dry basil
  • 1/2 tsp dry oregano
  •     Salt and freshly grnd black pepper, to taste
  • 1/2 c. dry seasoned bread crumbs
  • 3 Tbsp. grated Parmesan cheese
  • 1 1/2 Tbsp. soy margarine or possibly butter, melted
