Artichoke Pie Recipe


  • 12 med Fresh artichoke hearts
  •     (or possibly two 12-ounce pkgs frzn artichoke hearts
  •     Or possibly two 14-ounce cans or possibly jars, liquid removed)
  • 1 lb Crimini mushrooms, thickly sliced or possibly quartered
  •     Fruity extra virgin olive oil
  •     Salt, to taste
  •     Freshly-grnd black pepper, to taste
  • 1 Tbsp. Softened unsalted butter
  • 1 c. Dry bread crumbs, (Panko preferred)
  • 3/4 c. Freshly-grated Parmesan cheese
  • 3/4 c. Fresh grated Pecorino or possibly Asiago cheese
  •     (or possibly other flavorful grating cheese)
  • 3 Tbsp. Mixed minced fresh herbs
  •     (such as parsley, chives, basil)
  • 1/4 c. Rinsed capers, coarsely minced
  • 1 c. Pitted nicoise, kalamata or possibly Sicilian olive, coarsely minced
  • 6 med Hard ripe tomatoes, seeded and minced
  •     (or possibly two 16-oz cans of tomatoes, diced)
  • 12 ounce Fresh mozzarella or possibly fontina cheese, thinly sliced


Quickly Slice And Saute/fry Fresh Or Possibly Frzn Artichoke Hearts In Extra Virgin Olive Oil Till Just Tender. Drain On Paper Towels (if Using Canned, Simply Drain Well).…
